Description
Served in Ethiopia and Eritrea (where it’s called ga’at), this adored East African dish is traditionally made with barley or wheat flour. Genfo is an all-purpose porridge served for breakfast, at holiday time and also to women during pregnancy or after childbirth for strength and health.
Prepared by cooking the flour with water until thick and smooth, genfo is served in a large mound with a hole in the center filled with clarified butter flavored with berbere (a chili-spice mix). It may be offered plain or flanked with yogurt to be shared with a crowd.
